What about the advantages of adding Vitamin C in the form of Sodium ascorbic to your system? Will this help in curbing any desceases?

Interesting question and a good one. According to Wickipedia not all fish can synthesize this so it's possible that some would need it or they'd get the fish equivalent of scurvy. They would be more susceptible to disease and other problems. Apparently channel catfish can fall into this category - https://www.ncbi.nlm.nih.gov/pubmed/660305 and trout can as well.

If you're using a commercial fish feed that's designed for the species you're growing (or any fish that need vitamin C for that matter), I'm pretty certain you don't need to add any extra because it's already added into the feed as a supplement.

That was a good answear, had not thought about the foos contents and if fish or which species would require or can absorb it.
