Post subject:  Harvesting tilapia: has anyone tried spiking/ikejime?

When researching how to best harvest my tilapia, I came across a technique called iki jime (sometimes known as "spiking" it seems).

I was wondering if anyone had experience with this? Its proponents claim it is more humane than chilling and also claim great effects on the resulting quality. Basically you're supposed to use a sharp spike to quickly destroy the brain; the fish doesn't suffer and also the muscles don't spasm and release lactic acid etc.

However, I must confess after trying to dispatch 3 of my tilapia this way I'm still not sure I've found the right spot…certain have not able to achieve success the first few tries on each fish :( Does anyone know how to "find" the tilapia's brain from the outside…or should I just give up on this and toss them in ice water as seems to be the most common recommendation here?

I've always used a iki jimi to dispatch fish when fishing, you should be able to google the tilapias anatomy too see where his brain is, once you have this sussed it becomes quick, easy and humane. You could also 'dong' the fish for a nice quick dispatch. Hit hard in the head with a rolling pin or something similar ;)

+1 on iki jime - you need to know the spot exactly though.
This site is great,
though I don't think it has Tilapia - as cargs says get a diagram showing the brain location for your species. I just use an old screw driver that I've sharpened for my iki jimi spike.
