Post subject:  Blackened Tilapia

I'm trying out different things to do with Tilapia. This is the latest, I have to use Chinese Tilapia because thats all I can find around here. The recipe is simple, Salt, Pepper, Paprika, Cheyenne Pepper, Garlic Powder, Onion Powder, and Pretty much anything else you like. Heat your pan (I use a Wok) until the oil starts to smoke and coat the fillet with melted butter and cover with the spice mixture then drop the fillet in the pan. Cook for 2-3 min. per side or until the fish is done. This one took about 2 min. per side. Add your side dishes and sprinkle with parsley flakes.
It turned out pretty good, next time I'll add more Cheyenne Pepper to get a little more heat, but it was very good as it is. The thin flap on the fillet tends to cook too fast, so I think next time I'll lay it on the side of my Wok so maybe it will cook slower.

In hawaii most if not all locals including myself dont eat tilapia, only filipinos mostly eat it. Every one thinks its gross, im surprised up there people love it?

Maybe its because we have the ocean with hundreds of different kinds of fish, i was quite surprised when someone told me in texas they love eating it...
