I just had some home made wine last night. For the first time I did not use fresh grapes because they are getting so hard to find. I used the frozen Welches concord grape juice. It turned out great! :YUMMY:

I distill my own vodka at home and it is great stuff. But why can't we discuss it on this forum?
It is, at least here in Australia, quite legal and very popular with heaps of flavours for making liqeurs....like Frangelica. Perfect.

Or is it just too big a topic?

I'm a semi regular home beer brewer. Mostly because I am not a huge drinker of beer it lasts quite a while. Been brewing since uni over 15 years ago. I don't do anything too exotic mostly coopers type brews. I ALWAYS use finings and always leave them to bottle for at least 12 weeks before touching them. This always makes a fine brew. In summer I LOVE Coopers PALE ALE, and like to get it as cold as possible without freezing. Best thing after mowing the lawn!

Using Grolsh bottles is always good if you are the only beer drinker in the house. I prefer beer out of glass.

Come winter bring out the red wine for me.

First Up.... Mexican Cerveza:

Anybody tried 'Corona' style beer making? I have picked one up from my local brewing supplier to give it a go. I go through so much Corona around here so it would be good to make my own similar tasting brew.

Any tips for keeping it cool during the fermentation process... It recommends 12-14 degrees C... I have never done a lager before so I was quite shocked at the recommended temps.

Anyone used a fridge for their brewing?

Trying a Corona brew for the fist time (bottled last week) will have to go and find the actual recipe given to me from my local home brew store (they are fantastic).

I have mild temps here south of Sydney but if it is getting hot here, I wrap in a towel and wet it down. When I was working in Central QLD for a while some of the guys would put it in an ice slurry with those refrezable packs.

Hi BundabergKid..
Have a slow read of Part 2, section 10, 11....It tells you all about what you can not do......
but section 11a, says that if the still has a capacity of less than 5 litres,
Then 10 and 11 don't apply!

My still has a capacity of 5 litres at 94% (thats 12 bottles of store strength vodka) at $32.00 per bottle, ($384.00 + tax) for the cost of about $25.00.
And it is legal. Just can't sell it!
:wink:

when we were growing up my brother nearly blew up the house. He was about 15 and built a stilll under the house, I think he was using pumpkin and a few other things to ferment. The bloddy thing exploded and caused a fire.

Thats part of the reason why 5L is limited, so "accidents" are minimised.

Here is a cut and paste of the Act.

Part II—Stills

10 Making, selling or importing stills

No person shall without permission:

(a) Make or commence to make any still;

(b) Remove or set up or erect any still;

(c) Sell or otherwise dispose of, or purchase or otherwise acquire, any still, either by itself or with other property, or as part of any premises;

(d) Import any still.

Penalty: 50 penalty units.

Note: See section 4AA of the Crimes Act 1914 for the current value of a penalty unit.

11 Use of stills for purposes other than the distillation of spirits

(1) A person shall not use a still for a purpose other than the distillation of spirits unless the person has given notice to the Collector, in accordance with subsection (2), of his or her intention to use the still for that purpose.

(2) A notice under subsection (1) shall specify:

(a) the size or capacity of the still;

(b) the purpose for which the still is intended to be used; and

(c) the place where the still is intended to be used.

(3) A still that is used in contravention of this section shall be deemed to be an illicit still.

Note: As a result of this subsection, use of a still in contravention of this section is an offence under section 74.

(4) An offence under section 74 as a result of the operation of subsection (3) of this section is an offence of strict liability.

Note: For strict liability, see section 6.1 of the Criminal Code.

11A Stills of a capacity not exceeding 5 litres

The provisions of sections 10 and 11 do not apply to or in relation to a still of a capacity not exceeding 5 litres.

Cheers... Ira
